Quinoa Chilli

Hey everyone,

Day two of my pinterest conquest. Today, I made a quinoa chilli.

The original recipe is: Quinoa Chilli (veggie). I did not follow the recipe exactly as I just used what I had in the house.

Here is my variation of the original recipe:


-1 can whole or crushed tomatoes (NO SALT ADDED)- in the original recipe she used two

-1 can chickpeas

-1 can kidney beans

-1 yellow onion (medium)

-4 gloves of garlic

-2 tbs chilli powder

-1 tbs cumin

-1 tbs paprika

-2 cups cooked quinoa

– salt and pepper to taste

*If i was making this any other time, i would add in everything that she had in the original recipe*

INSTRUCTIONS: (based on my version)

  • Heat olive oil in a large cast iron pot over medium-high heat. Once oil is hot add onion and saute until tender, about 4 minutes, adding in garlic during last 30 seconds of sauteing. Add in diced tomatoes, tomato sauce, cooked quinoa, chili powder, cumin,paprika,and season with salt and pepper to taste. Bring mixture just to a boil, then reduce heat to a simmer, cover pot and allow to simmer 30 minutes.
  • Add in all beans and cook until heated through. Serve warm with optional toppings and sides (cheddar, sour cream, diced avocados, saltine crackers or tortilla chips).


This was so simple to make and tasted sooo good!
